When the company first began, its menu consisted predominantly of hamburgers, french fries, soft drinks, and desserts. Beginning with the the Whopper sandwich in 1957, BK has expanded the breadth of its menu by adding various non-beef items like chicken, fish and vegetarian offerings such as salads and meatless sandwiches; a breakfast menu; and non-soft drink beverages such as Icees, juices and bottled waters. Additionally, as the company expanded both inside and outside the US, it introduced localized versions of its products that conform to regional tastes and cultural or religious beliefs. To generate additional sales, BK will occasionally introduce limited time offers (LTO) of special versions of its products or bring out completely new products intended for either long or short term sales. Not all of these products and services have been successful, in 1994 Burger King introduced limited table service and special dinner platters; the concept failed to generate interest and was discontinued.[1]

As with other fast food companies, BK has recently begun introducing products that feature higher quality ingredients like whole chicken breast, natural cheeses such as cheddar and pepper jack, and other menu fair that attempts to appeal to the more adult palate and demographic. Again, not all of these products have met corporate sales expectations.[2]

In 1957, BK added its signature item, the Whopper. This 1/4 pound hamburger was created by Burger King founders James McLamore and David Edgerton as a way to differentiate BK from other burger outlets at the time.[3] The sandwich became famous enough that BK eventually adopted the motto "Home of the Whopper."

In 1973, they initiated a system to increase service times by creating two separate queues in the busiest restaurants: one line was labeled "Have it your way" that served customer "special orders" and the other was labeled "Have it our way" with "standard items, the latter option being the faster line. Have It your Way is still the company motto and practice, but when products are ordered they will be served the "standard" way akin to the Have It Our Way tag line unless the customer requests it Their Way.[citation needed] It was around this time that BK transitioned from a fresh beef patty to a frozen patty.

By 1979, BK had significantly expanded the breadth of its menu with many non-hamburger sandwiches including chicken, fish, desserts and breakfast products. Like all QSR outlets, BK has also modified its core menu with variants on its sandwiches, LTO products and items that cater to specific dietary needs. In 1985, BK again expanded its menu offerings by adding new products such as French Toast Sticks, the Croissan'wich and BK Chicken Tenders. BK has also 'tinkered' with its menu, modifying items like the Whopper into many "standard" varieties.

In 1998, US BK added a 99¢ (USD) Great Tastes menu to better compete with QSR competitor, Wendy's.[4] This value menu featured seven products: Whopper Jr., 5 piece Chicken Tenders, a bacon cheeseburger, medium sized french fries, medium soft drink, medium onion rings and small shake. In 2002, BK renamed it the 99¢ (USD) Value Menu revamped it to include a grilled sourdough burger, a bacon cheeseburger, small sized french fries and onion rings, small sized soft drinks, childs size shakes, chili, tacos, 5 piece Chicken Tenders, baked potatoes and a side garden salad.[5] Many of the items have since been discontinued, modified or relegated to a regional menu option[6]. In 2006, the Value menu was again renamed, to the BK Values Menu, with products ranging from 99¢ to $1.50 (USD).

The Burger King worldwide menus are similar to that of the United States; Major products like the Whopper and the Original Chicken Sandwich are constant across the globe. Even so, there are some variations due to differing tastes and cultural issues, including:

  • In predominantly Islamic countries like the UAE, pork is not served due to Muslim dietary laws. Additionally, in the Muslim countries meat is slaughtered in the halal method and labeled as such.[7][8] Like McDonald's, the hamburger is called either a burger or a beefburger; this avoids using the syllable "ham" and its association with pork.
  • In Israel, kosher dietary laws forbid the mixture of meat and dairy products; because of this, cheeseburgers are not popular. BK's runs kosher restaurants in its Israeli stores.[9]
  • In many international markets, BK will offer products or condiments that fit the local taste. For example in Canada, BK offers poutine gravy and vinegar for its french fries and peri-peri sauce is available as a sandwich topping in the UK. Hungry Jack's offers the Aussie burger with fried egg, beetroot and other Australian flavors.
  • In Asian markets, dark meat chicken is preferred over the white meat and products sold in these markets often are advertised as such.[10] Additionally, pies sold in Asian countries are fried, turnover-style instead of the deep-dish tart-type associated with American sweet-filled pies,[11]

Burger King prepares its foods in one of four ways: broiling, deep frying, baking or microwaving. As per its mottos and advertisements, BK cooks its burgers and grilled chicken on an automated grill[12], while its other chicken products, fish, sides and breakfast sausage are deep fried in vegetable oil.[13] BK prepares its eggs, biscuits, Cini-Minis and cookies by baking in a convection oven[14] and microwaves its BK Veggie (US) burger patty.

[edit] Sandwich preparation

During periods of high volume sales, BK will pre-prepare high demand items such as hamburgers and cheeseburgers; during "slower" periods all sandwiches are made to order. The Whopper sandwiches, Angus burgers, TenderGrill and TenderCrisp chicken sandwiches and BK Veggies are all made only when ordered.[15] Usage of microwaves in sandwich preparation is limited to maintaining sandwich heat and not used to cook the product, except for the BK Veggie.

BK prepares its salads in store daily, as as well as cookies and biscuits. Most of its biscuits are pre-made and frozen while some US stores do prepare them fresh[16].

[edit] Dietary concerns

In response to recent trends in obesity in the US and other nations, BK has begun to modify its menu and practices in regards to its food preparation and product offerings. In addition to offering lower fat menu item such as salads, BK has recently modified its nutrition guides to include dietary guidelines and other nutritional data. Unlike McDonald's in the US, BK does not print nutritional data on its product packaging.

  • BK has several vegetarian options, including salads, the BK Veggie sandwich and its Spicy Bean Burger sandwich.[16][6] The majority of these products do not qualify as vegan due to the presence of egg or dairy products[13].
  • In the US, BK will prepare many of its products in accordance with low-carb diets, such as the Atkins Nutritional Approach (Atkins Diet) or the South Beach Diet.[17] This done by eliminating bread and certain condiments, such as ketchup, during preparation and serving the product as a salad. [18]
  • Burger King is expected to be using trans fat free oils in its cooking at anytime now that it's the year 2008.[19]
  • BK food is prepared with several known food allergens, including wheat, milk, soy and eggs.[13]
  • In response to the increase in childhood obesity in Western nations, BK will begin phasing in broiled Chicken Tenders, apple "fries", french cut apples served in a fry box, and organic apple sauce that will be featured in a new low fat Kid's Club Meal.[20][21] According to a statement by BKC the new Kid's Club meals will contain no more than 560 calories per meal, less than 30 percent of calories from fat, less than 10 percent of calories from saturated fat, no added trans fats and no more than 10 percent of calories from added sugars.[22][23]

[edit] Menu demographic targeting

BK targets value oriented customers with its BK Value Menu. In the US, this menu contains products that are usually priced in the $1.00 to $1.49 range. In non-U.S. markets, the BK Value Menu typically takes on a different name with prices set to reflect the approximate value of one U.S. dollar. The naming of the value menu will vary for each market, examples include the 99ers menu that features items for sale at 0.99€ (Germany), the Wrap and Snack menu (Italy) and King D€als Menu that features items for sale at 1.00€ (Netherlands). Regardless of which market, the value menu usually includes smaller sandwiches and entrées, small sized side orders, small sized drinks and desserts. In the US, the value menu now has a breakfast offering, again in the same format as the lunch/dinner value menu.[24]

As with all major QSR vendors, BK has a menu that specifically targets children. In the US they are called the Kids Club Meal and they compete with the popular Happy Meal from McDonald's and the Kid's Meal from Wendy's. The meal includes an entrée, a side order, beverage and a toy. The toy is usually a product tie-in with a movie or popular television show. The entrée and side offerings differs from market to market, as will portion size.

In the North American Market, BK further divides its children's menu in to three segments- toddler, kids and pre-teen. The only difference between the first two groups is the prize offering, the toddler will receive an age appropriate toy. The pre-teen offering includes a larger entrée and beverage and is called the Big Kids Meal.

To appeal to the adult market, BK offers several sandwiches and other products made with higher quality ingredients such as whole breast chicken fillets, Angus Beef, Cheddar Cheese, honey mustard and hot sauces. These sandwiches are usually served on a better quality roll, such as baguettes or corn dusted potato rolls. Additionally, BK targets sub-groups within the adult market with products like the BK Stacker and BK XXL lines at late teen to young adult males or health conscious individuals with products such as salads, grilled chicken and veggie burgers. In international markets, the health conscious menu is sold under the LA Range or the King Delight names. [25][26][27][28]

The range of products sold usually depends on the time of day. Lunch items such as hamburgers and fries are traditionally not served during breakfast time, however some BK stores do sell food under their "Burgers for Breakfast" program.[29] Breakfast operational hours vary but are usually from store open (and anywhere from 2:00 to 4:00 a.m. in 24-hour stores) to 10:30am on weekdays or 11:00am on weekends. In some 24-hour restaurants, such as airports and service plazas, many items are already available for immediate take away. Breakfast items are not served at any time except breakfast, but there are some exceptions; the new Cheesy Tots and are always available upon request at most US BK restaurants. [edit] Product packaging

Burger King's product packaging has undergone many changes over the years. Originally the larger sandwiches were sold in a clamshell style box made of Styrofoam, but with environmental concerns over Styrofoam in the early 1980s, the packaging was changed to a paperboard box. To cut back on the amount of paper that the company used, the paperboard box was fully eliminated in the late 1980s or early 1990s and was replaced with waxed paper. Smaller sandwiches, e.g. hamburgers, were originally served in small paper bags through the end of the 1970s when BK began wrapping its smaller sandwiches in waxed paper. Paperboard boxes are still used for its "finger food" products like Chicken Tenders and Fries, French toast sticks and desserts.

For a short time after BK began moving to a fresh made model (certain sandwiches are made only after being ordered instead of being pre-made ahead of time), BK used an aluminum foil wrapping similar to Wendy's sandwich packaging on its Whopper sandwich.

Starting in 2006 with the BK Chicken Fries product, BK began adapting some of its product packaging so that it could be placed in an automotive cup holder. The BK Chicken Fry box, while square in shape, will sit comfortably in the cup holder and its top, when opened, forms a small tray that is designed to hold dipping sauce. It has since added a trademarked and patented round french fry container which it calls the FryPod, an obvious play on the Apple iPod name. Additionally, BK's large and King sized beverage containers are made from molded HDPE plastic with a funnel-like shaped bottom that allows the over sized cups to fit in the smaller sized cup holders.

Unlike other QSR vendor that tag their products with a slip of paper (McDonald's) or do not mark their sandwiches at all (Wendy's), Burger King uses a series of icons on its packaging to help identify its products.

  • The BK Stacker sandwiches consists of two, three, or four beef patties, "Stacker" Sauce (a Thousand Island Dressing variant), bacon and American cheese. It is one of their late teen to young adult male oriented products. It is available in the North American and Australian markets.
  • The BK Crown Jewels line of burgers are made with a Whopper patty and a variety of toppings served on a Kaiser (bulkie) roll. Toppings include a mango lime sauce, avocado, aioli, a Cajun spiced sauce and relish. It is one of their larger, adult oriented sandwiches made with higher quality ingredients than their "standard" menu items. They are served only in the New Zealand market.
  • The BK XXL line of sandwiches is a group of double cheeseburgers made with two 4 ounce Whopper patties on a Whopper bun. It is one of their late teen to young adult male oriented products. The line is only is sold in Europe and has several variants.
  • The Big King is BK's take on McDonald's Big Mac sandwich. It and its varients are sold in the European and South American markets.

  • BK has one company-wide "primary" chicken sandwich and several "secondary" ones that are offered on a regional basis:
    • The Original Chicken Sandwich is the "basic" chicken sandwich sold by BK. It is made with mayonnaise and lettuce and is served on a sesame seed bun. It is available in all markets, except Australia, under various names. Numerous variations of this sandwich have been offered.
    • The TenderCrisp is a deep-fried chicken sandwich with mayonnaise, lettuce and tomato and is served on a corn-dusted bun. It is a larger, whole muscle piece of chicken breast instead of a formed patty like the Original Chicken. It is sold in the North America market, parts of Europe and New Zealand.
    • A smaller fried chicken sandwich called the BK Crispy Chicken sandwich is sold in Spain, Germany and Italy. It is made with mayonnaise, lettuce and tomato on a sesame-seed roll. There was a US version of this sandwich was called the Chick'n Crisp sandwich, which was made with mayonnaise and lettuce or parmigiana style with marinara and mozzarella cheese. It has been reintroduced in a new spicy flavored style with seasoned breading. It is roughly the size of the Burger King regular hamburger.
  • BK offers several variations on its grilled chicken sandwich, none of which are sold company-wide:
  • The BK Chicken Kiev Sandwich contains a breaded chicken breast filled with melted butter served on a Kaiser roll with Swiss cheese, lettuce, tomato, and a curry mayonnaise sauce. It is only available several European locations.
  • BK varies its chicken nugget product according to regional preferences:
    • Chicken Tenders are shaped, breaded pieces of deep-fried, white-meat chicken. They are both sold as a value and children's oriented product. They are sold in the North American market, Spain, and New Zealand. In Australia, Chicken Tenders are marketed as Chicken Strips, and in Germany and Italy as King Nuggets.
    • Chicken Strips are breaded pieces of deep-fried whole breast chicken pieces, equivalent to Chicken fingers. They are both sold as a value and children's oriented product. They are sold in the parts of the European market.
    • Chicken Bites were battered pieces of deep-fried chicken pieces, equivalent to popcorn chicken and were a side order. As of September 2007, they have been discontinued, and all restaurants will use up their remaining stock.
    • BK Chicken Fries, are French-fry cut pieces of breaded chicken and are a larger, adult oriented product made with higher quality ingredients than their Chicken Tenders. They are sold only on the North American Market and in Italy.

  • As with most QSR restaurants, Burger King main breakfast menu products are breakfast sandwiches.
    • The Croissan'Wich is the signature breakfast sandwich. The Croissan'Wich is also a family of breakfast sandwiches in various sizes and configurations. In some markets, it is simply called a Croissant Sandwich.
    • BK offers regional breakfast sandwiches in the US and Canada. The breads that BK offers are biscuits (a biscuit in the US is equivalent to the British scone), bagels or English muffins.
    • All North American breakfast sandwiches are usually made with a sausage patty, eggs and American cheese. Bacon and ham and be substituted for the sausage or they can be made without any meat. In parts of the US, particularly the South, chicken fried steak, pork and fried chicken are available as optional meats on breakfast sandwiches.
    • In the UK, breakfast sandwiches are made with fresh bakery rolls as the primary bread. Otherwise, the ingredients are similar to US breakfast sandwiches.
    • Both Argentinian and Chilean BKs serve a simple Toastada breakfast sandwich, ham and cheese on toasted bread.
    • The Enormous Omelet Sandwich is a larger breakfast sandwich sold in the US. The Enormous Omelet Sandwich consists of sausage patties, bacon, eggs and American cheese on a sesame seed bun, while the The Meat'normous Omelet Sandwich adds a portion of ham. It is one of BK's young adult male oriented products.

    • Burger King's Kids' Club Meals are the North American variation. Three varieties form the Kids' Club Meal base: Chicken Tenders, hamburger, or cheeseburger. A preteen version of the Kids' Club Meal, called the Big Kids' Meal, debuted in 1999. It offers a selection of a larger portion of Chicken Tenders, double hamburger or double cheeseburger meal.
      • With Chicken Tender sizing for the Kids' Club meal, franchisees have the choice of sizes: either a 4- or 5-piece order for the regular Kids' Club Meal and either a 6- or 8-piece order for the Big Kids' Meal. BK owned restaurants sell the 4- and 6-piece sizes.
      • North American Kids' Club Meals are available with french fries, strawberry-flavored applesauce or onion rings as a side order.
      • North American drink options are soda, milk, chocolate milk, apple juice, orange juice and milkshakes. In the US, Icees are also available.[33]
      • Canadian Kids' Club Meals additionally offer a veggie burger.
      • Little Tykes brand toddler toys are available on request instead of the regular toy offering in the US.
    • UK and Ireland Kids' Meals offer Chicken Strips or Bites, hamburger, cheeseburger, or a veggie burger and two side orders.
    • New Zealand Kids' Meals offer a 3-piece Chicken Tenders, hamburger or cheeseburger.
    • Italian Kids' Meals offerings are hamburger, cheeseburger, 4-pieces King Nuggets and Whopper Jr..
  • Burger King has a line of Salads that are available in a variety of types and sizes, depending in which country they are sold. Varieties include Garden, Caesar and Greek. In all markets, salads are one of their female and health conscious targeted menu items.
  • Chili, tacos, the Sourdough burger (Similar to the Whopper Jr., with sourdough bread) and the Chicken Tender sandwiches (Chicken Tenders, mayo and lettuce or parmigiana style on a sesame-seed roll) are all US regional menu options. These items are all some of their "value" oriented products. The Chicken Tender sandwich is also available in Germany.
  • In several markets (e.g. Italy), BK sells wraps made with beef or chicken and various vegetables. In all markets, salads are one of their female and health conscious targeted menu items.
  • In Argentina and Chile, sells the Churrasquito sandwiches made with steak fillets, mayonnaise, lettuce and tomatoes on a fresh baguette roll. They are both one of their larger, adult oriented sandwiches made with higher quality ingredients than their "standard" menu items.

  • In the 1970's, the chain offered a fish sandwich named the Whaler, "The genuine Burger King fish-steak sandwich," as well as a hot ham and cheese sandwich called the Yumbo, which resembled a typical Arby's sliced-meat sandwich.
  • In 1987, Burger King offered a set of miniature burgers called Burger Bundles. The Burger Bundles were sold in a set of three or six, much like White Castle or Krystal burgers, but served in a single package. The sandwich was reintroduced in a slightly different format called Burger Buddies. Instead of three or six miniature hamburger patties, it had a single number eight shaped patty that was served on a pair of co-joined buns. The sandwich was sold for 99¢ and was designed to be torn into two smaller sandwiches. There was a breakfast version of the Burger Buddies called the Breakfast Buddies that had eggs, cheese and a sausage patty, again for 99¢. Breakfast menus at the time also began selling mini hash-browns, which resemble Tater Tots. Another variant of the Burger Bundles was introduced later in 1987 in chicken sandwich form called Chicken Bundles.
  • The Chicken Whopper was the replacement to the BK Broiler sandwich. There were two types, the Chicken Whopper and the smaller sized Chicken Whopper Jr. Both featured grilled chicken, mayonnaise, lettuce and tomato and were served on a sesame-seed bun. The Chicken Whopper is still available in parts of Europe and the Middle East. It was supplanted by the TenderGrill in the US and other regions.
  • The Bull's-eye Barbecue Burger was two side-by-side hamburger patties, American cheese and bacon with Bull's-eye Barbecue brand barbecue sauce served on steak roll. Later it was sold as a traditional style double cheeseburger. BK Chile sells a similar sandwich family called the X-tra Long Tocino Queso (X-tra long bacon cheese) made with American and Cheddar cheeses, bacon, lettuce and tomato. BK Middle East and Europe offers a similar sandwich called the BK Limo sandwich that is served with three patties, American cheese, pickles, ketchup and mustard.
  • The BK Back Porch Grillers were a line of burgers that featured a spiced and flavored patty served on a bakery style roll. There were two varieties: The Regular served with mayonnaise, whole leaf iceberg lettuce, tomato and grilled onions and the Bacon Cheddar with bacon and smoked cheddar cheese. There was one LTO variety, the Black Stack Griller made with Black Strap Barbecue sauce (a strong molasses flavored sauce), bacon, lettuce and tomato. The Griller patty was flavored so that it had a taste similar to a hamburger that had been grilled over a charcoal fired grill.[34]
  • In 1993, Burger King experimented with table service. After 4 p.m., customers would place their order at the counter, and their order would be brought to them at their table.Customers were given complimentary popcorn to eat while waiting for their meal. To coincide with the offering,a series of Meals called the Dinner baskets were introduced.The dinner baskets included the Whopper Dinner Basket, Steak Sandwich Dinner Basket, Fried Chicken Dinner Basket, and Shrimp Dinner Basket. In the New England region of the US, BK sold a Fried clam Basket. The dinner came with two sides, including a choice of a side salad, cole slaw, french fries, or baked potato. The sit-down restaurant concept was abandoned in 1994 in favor of the original quick-service formula.[35]
  • Burger King has sold many LTO Specialty Sandwiches (the specialty sandwich line used the same bread that the Original Chicken uses). Varieties included a flame-broiled Meatloaf sandwich; an Italian sausage sandwich served in one of three ways: with onions & peppers, parmigiana style with mozzarella cheese & marinara sauce or all four ingredients; one of two steak sandwiches made from steak fillets or later, restructured beef; A ham and cheese sandwich with mayonnaise, lettuce and tomato; and a veal parmigiana sandwich.
